Cooking with Crystal
Heh, I love my post title, if I ever had my own cooking blog I would name it that. Has a nice ring to it…
Yesterday, I decided to get off my lazy butt and actually do something productive. I’ve been sick this whole week feeling like death, so I’ve basically just been laying around. Last night I decided to make dinner. I actually love to cook, to me it’s kind of a creative outlet and there’s nothing better than making a delicious meal and watching others devour it. Call me weird but I take it as a great compliment. I choose a recipe called Mini Turkey Loaves out of the Diet Delights cookbook my ma gave to me. Personally, I hate the word Loaf it sounds odd and not too appealing, I think I’d rather call them Mini Turkey Muffins.
The process of making them was very easy—just like making meatloaf, with different ingredients of course. They turned out to be decent, probably would of been better if I had a food processor to chop the apples and onions into smaller pieces. Overall, I was happy with the outcome.

Now you see why I call them muffins.
The cookbook called for them to be served with a vegetable stir-fry…I’m too broke to buy a bunch of veggies, so I heated up a frozen bag of vegetable medley and served them with that. Topped with organic cranberry sauce and parsley.
Recipe
- Ingredients
1 pound ground turkey
1 small apple, chopped
1/2 small onion, chopped
1/2 cup uncooked rolled oats
2 teaspoons Dijon-style mustard
1 teaspoon dried rosemary leaves, crushed
1 teaspoon salt
Dash of ground pepper
- Directions
Preheat oven to 425° F. Grease 12 medium muffin cups. Combine all ingrediants in large bowl. Press evenly into prepared muffin cups.
Bake 20 minutes or until lightly browned and no longer pink in center. Serve with cranberry sauce and garnish, if desired.

i hate being sick. i feel like i am just wasting life when im sick. I wish I could cook like you. I am terrible @ cooking. The food looks good. Im terrible at cooking so I envy you darling.

I can’t wait to start cooking too… but I won’t start cooking regularly until I move into my own house with my own kitchen. Now, I probably cook like twice a month (and then I just go out to eat or my/Bf’s parents cook for me).

This reminds me of the small turkey meatloafs we made for Thanksgiving! Man I want to make them again, so good. Love your posts lately!!
