Delicious ways to use your leftover Easter eggs
Easter has past and you have a bunch of decorated eggs leftover in your fridge. Sure, you could eat them all, but I’m sure that would get boring, and may result in a tummy ache. So what else do you do with them…? Use them to make delicious foods!
I was browsing First magazine and came across some recipes all using hard-boiled eggs. I thought they all looked delicious and thought I would share. Get creative with your leftover eggs!

Green Goddess Potato Salad
Makes 4 servings
Ingredients
□ 2 medium red bliss potatoes (about 1/2 LB.)
□ 1/2 cup mayonnaise
□ 1/4 cup sour cream
□ 2 Tbs. each chopped fresh parsley and scallions
□ 1 Tbs. white wine vinegar
□ 1 clove garlic, peeled and chopped
□ 1 Tbs. chopped fresh tarragon
□ 2 hard-boiled eggs, peeled and sliced
Directions
In saucepot over high heat, bring potatoes and enough salted water to cover to a boil; cook 15 minutes, or until fork-tender. Cool; slice. Meanwhile, in bowl, combine mayonnaise, sour cream, parsley, scallions, vinegar, garlic and tarragon. Season with salt, if desired. Divide potatoes, eggs, and dressing among 4 plates, altering ingredients.
Southwestern Veggie Wraps
Makes 4 servings
Ingredients
□ 1 can (16 oz.) refried beans
□ 1 tsp. chili powder
□ 1/2 tsp. ground cumin
□ 3 hard-boiled eggs, peeled and diced
□ 1 avocado, pitted, peeled and diced
□ 1 tomato, seeded and chopped
□ 1 large scallion, thinly sliced
□ 2 Tbs. chopped fresh cilantro
□ 4 (8″) flour tortillas
□ 1/2 cup shredded nacho-and-taco cheese blend
Directions
In bowl, combine first 3 ingredients. In separate bowl, combine eggs and diced avocado. Season with 1 tsp. salt, if desired. In separate bowl, combine tomatoes, scallions and cilantro. Divide each mixture evenly among tortillas. Top with shredded cheese. Roll tortillas jelly-roll style.
Sausage-Cheese Strata
Makes 6 servings
Ingredients
□ 14 slices day-old rye cocktail bread, divided
□ 4 cups chopped raw spinach
□ 1 1/4 cups chopped kielbasa (about 6 oz.)
□ 4 hard-boiled eggs, peeled and chopped
□ 1 cup grated Swiss cheese, divided
□ 3 large eggs
□ 2 cups whole milk
□ 1 Tbs. Dijon mustard
□ 2 Tbs. finely chopped chives
□ 1 Tbs. unsalted butter, at room temperature
Directions
Heat oven to 350°F. Place 10 slices bread in greased 9″ X 13″ baking dish. Top with next 3 ingredients and 1/2 cheese. In bowl, whisk together next 4 ingredients. Pour into baking dish. Butter remaining bread; halve. Place on top; sprinkle with remaining cheese. Bake 45 minutes, or until set.
Mmm…I’d totally give one of them a try if I had some Easter eggs, unfortunately I didn’t decorate any this year. I’ll have at one in the near future though, it doesn’t take long to boil eggs. Did you know eggs also have a lot of vitamin A? I didn’t…

I totally didn’t refrigerate ours. When I was a kid I would eat eggs out of my basket a couple days later with no worries and never got sick, but it skeeves me out now.
I love hard-boiled eggs, but especially deviled eggs mmm.

I’ve gotta try those recipes, they look amazing. I love eggs, that’s the main reason why I could never be a vegan lol. Like J, I am addicted to deviled eggs, hehe.

I loveee hard boiled eggs.. well only the whites. I always feel sick after eating the yolk.

Eggs? I hate boiled eggs. Since I was a kid I puked after eating them. =/ If only I could eat eggs I would of given those recipes a try since I love cooking.

Oh wow these recipes look delicious! I don’t eat eggs at all in any way or form so I guess I won’t be making any of them any time soon though! For easter where I live its all chocolate eggs anyway!

I didn’t know eggs had vitamin A
Sometimes I’ll make a quiche if I have a lot of eggs, that helps to use them up. Or put hard-boiled eggs in salad.

I’ve never decorated an egg my whole life and never had to deal with a surfeit of leftover Easter eggs, haha. As much as I love eggs, I’m glad. I can’t imagine having to force myself to eat all that.

I always find cute stuff but I try not to buy things I don’t need. You collect dolls, so it’s cool for you to look, but I always fight the urge to bring home toy dinosaurs and such. I looked at the Flickr link you sent and she has some cool stuff, but so much of it is just clutter. If she doesn’t resell it (which she might), I just don’t know what she does with it all.
You should definitely go thrift shopping though. My goal is usually just to find a great pair of outrageous earrings or a funky scarf. Something that’s cheap but very wearable. I used to bring home tons of stuff from every trip, but I’ve learned to be pickier and not buy things for the sake of buying.
If you hit up places you better post pics!
