My first batch of cupcakes!
I know…it’s kinda pathetic that a 23 year old woman has never baked cupcakes before, but better late than never! Besides, I’ve never been too big on sweets, and I didn’t have a kitchen of my own until late last year. I wouldn’t dare bake anything in someone else’s kitchen because I’m the messiest cook/baker ever. Just baking the cupcakes today (technically last night) I managed to make a mess all over the counter and in the sink, plus stain the rug in the kitchen with cake batter. I’m horrible. At least I had fun and the cupcakes turned out delicious.

Red Velvet Cupcakes - very rich and yummy.

What you’ll need:
- 1 pkg. (18.25 oz.) red velvet cake mix, preferably Duncan Hines’
- 3 eggs
- 3/4 cup sour cream
- 1/4 cup unsweetened cocoa power
- 1/2 mini chocolate chips
- 1/2 cup butter, at room temperature
- 4 oz. cream cheese, at room temperature
- 1 pkg. (1lb.) confectioners’ sugar
- 1 tsp. vanilla extract
- Red decorating sugar crystals, optional
Directions:
Preheat oven to 350°F. Line 18 muffin cups with cupcake liners. On medium-low speed, beat cake mix, eggs, 1 1/2 cups water, 1/2 cup sour cream and cocoa until combined. Increase speed to high; beat 2 minutes. Stir in chocolate chips. Divide batter among liners. Bake 20 minutes or until toothpick inserted into centers comes out clean. Cool 10 minutes. Transfer from pans to racks; cool completely.
On medium-high, beat butter and cream cheese until smooth and fluffy. Gradually beat in confectioners’ sugar until combined. Beat in vanilla and remaining 1/4 cup sour cream until fluffy. Spread frosting over cupcakes. If desired, sprinkle with sugar crystals.

oooh those look yummy. I am an amazing cook, but i don’t do baked goods. I have no patience when it comes to waiting around for things to bake. I am the type of girl to make a batch of cookie dough, then just eat it like that.

Those look great. Red velvet always makes a mess when I make it as well! The food coloring got all over me and it looked like I killed someone.
Those look delicious and I love how the sprinkles match the cupcakes, haha. I’m a dork. Great job!

Those look good, but not a fan of Red Velvet. I find it too…bland for my liking. The icing looks good

I’m messy when it comes to baking. At the end of it, I’m covered in ingredients especially flour. Those cupcakes look yummy though, especially the icing! I’m not quite much of a baker, everything turns out black and burnt.

you need to post a “how to ice cupcakes correctly” instructiona video! I can never ice cupcakes neatly. I love cupcakes, http://cupcakestakethecake.blogspot.com/ yums! I will definitely be trying this recipe out this coming weekend and post my shiteous icing job.
